Aultmore 1990 30 Year Old Octave

Distilled back in 1990, and bottled in 2021.
Notes from Duncan Taylor Pre-Octave (ie before it was put into the Octave cask): Colour - Young Sauternes.
Nose - Lemon zest with a light pepperiness. Fresh-cut grass and spring blossom enveloped in a light toffee coating.
Palate - More citrus zestiness and white pepper, orange cream and heathery notes, Crisp and full mouth feel. Finish - Touch of oak and the citrus notes persist.

This release (after Octave):
Colour - Copper.
Nose - Dark chocolate, full of dried fruits and honey, prunes, and raisins. Old sweet madeira wine, Christmas cake and walnuts.
Palate - Sherry notes from the nose continue very strongly on the palate but slightly drier, complex, and nicely rounded, a pinch of pipe tobacco, a complete classic sherried Speysider.
Finish - Long, and follows the same flavour profile as the palate, softly spicy with some cloves in the aftertaste.

Aultmore distillery

Aultmore distillery, located in Keith, Banffshire, is renowned for producing the eponymous Aultmore single malt whisky. Established in 1895 by Alexander Edward, the distillery initially utilized a waterwheel before transitioning to a steam engine. Following periods of closure during the Pattisons' bankruptcy in 1899 and World War I due to barley shortages,

Aultmore reopened and was acquired by John Dewar and sons in 1923. The distillery changed hands several times before Bacardi subsidiary Dewars repurchased it in 1998. Aultmore released its first official bottling, a 12-year-old expression, in 2004, alongside previous flora and fauna and rare malts releases. The distillery underwent significant expansion and renovation in 1970, featuring additional stills and a rebuilt facility. Aultmore has a rich history and is recognized for its exceptional whisky, including offerings aged over 30 years.
